It is true that I am not a great cook. I don’t like cooking either and our fridge is mostly empty in M. and mine flat. So why may you ask there is a food recipe on the blog? Well, let me tell you that. It must be really good to end up with me wanting to put it up 🙂
I love pancakes, in fact pancakes and donuts are my favourite sweet food. However, I used to not eat pancakes too often because they are not too good for me. When I heard about the possibility of making oat pancakes which are healthy I was in. For the last few weeks I made them twice a week and each time I changed the recipe a little. Here is the one that is the best in my opinion and these pancakes come pretty close in taste to the real deal. M. agrees and usually he doesn’t like healthy food. Here is the recipe.
1/2 cup of oat flour
1/2 cup of milk/ coconut milk
1/2 teaspoon of cinnamon
1/2 teaspoon of baking powder
few drops of vanilla extract
pinch of salt
1/2 a teaspoon of brown sugar / you can skip this step if you want
I would recommend blending everything in a blender and then adding mashed bananas into the batter. It tastes the best when you leave some banana chunks in. This amount of batter makes the amount of pancakes that is seen in the photos.
